Miso Aubergines

Ingredients
 

2 aubergines, halved


Marinade:

2 tablespoon miso paste

1 tablespoon sesame oil

1 tablespoon tamari  

1 tablespoon maple syrup

1 tablespoon rice vinegar

2 tablespoon hot water


Instructions


Heat oven to 180C/160C fan/gas 4. 


With a sharp knife, criss-cross the flesh of the aubergines in a diagonal pattern, then place on a baking tray. 


Mix the marinade ingredients together until well combined and brush onto the aubergines (leaving 2 tbsps for drizzling when cooked) Ensure they are well saturated for full deliciousness!


Cover the tray with foil and roast in the centre of the oven for 30 mins.


Remove the foil and roast the aubergines for a further 15-20 mins, depending on their size, until tender.


When cooked, drizzle over the 2 tbsps of marinade set aside earlier.


Great served with brown rice, quinoa, or rice noodles
