Ingredients
Sweet potatoes (as many as you like) Washed and cut into chunks (keep the skin on)
Olive oil
Dried herbs (oregano, mixed herbs, thyme, dill - whatever you like/have in the cupboard)
Instructions
Roast in a hot oven (200oC) for approximately 20 minutes/cooked through.
Leave to cool, store in an air-tight container, keeps in the fridge for a few days.
Great for picnics, packed lunches, as part of your 'On the Go' quick meal.
