Piña colada Chai Pudding

Ingredients


  • 1 fresh pineapple, peeled, cored and chopped into chunks
  • 250ml Coconut drink (such as Rude Health) or Coconut water
  • 4tbsps Chai seeds
  • 2 tbsps Maple syrup


Instructions
 

  • Mix the chai seeds and maple syrup in a bowl, then gradually add the coconut milk drink. Leave to stand for 20 minutes, stirring occasionally.
  • Set aside some chunks of pineapple for decoration, pop the remaining pineapple into a blender to create a puree.
  • Layer the chai seeds and pineapple puree in presentation glasses and top with chunks of pineapple (get creative - decorate your puddings with some fresh coconut shavings, mint leaves, etc)
  • These can be kept in the fridge for 2 days or served immediately.
