Piña colada Chai Pudding
Ingredients
- 1 fresh pineapple, peeled, cored and chopped into chunks
- 250ml Coconut drink (such as Rude Health) or Coconut water
- 4tbsps Chai seeds
- 2 tbsps Maple syrup
Instructions
- Mix the chai seeds and maple syrup in a bowl, then gradually add the coconut milk drink. Leave to stand for 20 minutes, stirring occasionally.
- Set aside some chunks of pineapple for decoration, pop the remaining pineapple into a blender to create a puree.
- Layer the chai seeds and pineapple puree in presentation glasses and top with chunks of pineapple (get creative - decorate your puddings with some fresh coconut shavings, mint leaves, etc)
- These can be kept in the fridge for 2 days or served immediately.
