Ingredients
15 whole dates (sayer or medjool are best but any will be delicious!)
7 teaspoons of nut butter (I use almond)
3 tablespoons roasted peanuts
50g 70% or 85% Cocoa Chocolate
Instructions
- Put a tablespoon of the peanuts in a food processor or blender or chop with a knife to make crushed peanuts. Set aside.
- Slice the dates open, remove any stones. Stuff them with approximately 1/2 teaspoon of nut butter and 2-3 peanuts each.
- Melt the chocolate and coat each date. Place them onto a board covered with baking parchment .
- Sprinkle the stuffed dates with the crushed peanuts and put them in the fridge for 20 minutes or until the chocolate has set.
